The Laboratory of Quantitative Food Microbiology at the Department of Food Science of University of Campinas’s Food Engineering School in Brazil offers a post-doctoral fellowship funded by the São Paulo Research Foundation (FAPESP) under the scope of the Thematic Project “Beef quality in Bos indicus cattle – biological markers for meat product attributes in different pH ranges final” (FAPESP grant number 2017 / 26667-2), coordinated by Prof. Dr. Carmen J. Contreras Castillo (ESALQ / USP).
The work plan, supervised by Prof. Dr. Anderson S. Sant’Ana (FEA / UNICAMP), related to this post-doctoral fellowship has the following specific objectives:
i) Study of the microbiota, by culture-dependent methods, present in three vacuum-packaged beef cuts with different pH values stored under different refrigeration conditions;
ii) Taxonomic and functional study of the microbiota (metagenomics) present in chilled vacuum packed beef cuts with different pH values during storage;
iii) Quantification of the microbial behavior (predictive modeling) of the microbiota present in chilled vacuum packed beef cuts with different pH values during storage;
iv) Interpretation and establishment of associations between the data obtained in i, ii and iii, combined with intermediate and final products metabolite data of the microorganisms present in the samples, aiming to contribute to the general objective of the thematic project, i.e., “the characterization of patterns of quality and critical points for the categorization based on the analysis of the characteristics of vacuum packed beef”. This information is essential for incorporation into decision-making models of meat quality programs coupled with productive efficiency, with emphasis on reducing losses and increasing safety and value aggregation.
Requirements to fill this position
The candidate must have a degree, preferably, in Food Engineering or Biology or Veterinary Medicine or Pharmacy or related areas. In addition, the candidate must have completed a doctorate (in Food Science or related fields) in not more than 7 (seven) years until the date of submission. Also, the candidate must have excellent research record. It is essential that the candidate has experience in food microbiology, predictive modeling, metagenomic techniques and techniques such as nuclear magnetic resonance and gas chromatography that will be used to characterize the samples.
The candidate should also be involved in sample collection (bovine carcasses in different slaughterhouses and at different times of the year), being responsible for their planning and conduction. He/she should also be a motivated person and have the ability to work in teams, which will be fundamental for coordinating activities with other researchers involved in the thematic project. The candidate cannot have an employment relationship, and the candidate must dedicate exclusively to the research project. The candidate must present high skills for scientific writing, reading and conversation in English. It is preferred that the candidate has international research experience.

The opportunity is open to Brazilians and foreigners candidates. The selected postdoctoral fellowship will receive FAPESP Post-Doctorate fellowship in the amount of R $ 7,373.10 per month and Technical Reserve equivalent to 15% of the annual value of the fellowship to meet unforeseen expenses directly related to the research activity.
